Hedgehog Slice is incredibly simple to make and is always a winner with everyone. A mix of fudgy chocolate with crunchy biscuit pieces, it’s very hard to stop at just one piece!

Growing up I remember Chocolate Hedgehog Slice being one of my favourite slices to make. Being No Bake it was incredibly quick and easy and we always had all of the ingredients on hand.

Made from melting butter, sweetened condensed milk and cocoa together and stirring through broken up biscuits, coconut and nuts.

This is pressed into a tin and topped with chocolate before being set in the fridge. It couldn’t be quicker or easier!

What is Hedgehog Slice

Old Fashioned Hedgehog Slice is a traditional no bake chocolate slice with distinct pattern of light and dark made up of a fudgy chocolate mix and crushed pain biscuits and nuts. It has a chocolate topping and can be covered in coconut.

Made in many different countries around the world, under different names, it’s very hard to know the true origin but that’s thought to be Germany.

It also shares similarities to Italian Chocolate Salami and the late Queens favourite dessert, Chocolate Biscuit Cake.

Variations

Caramilk Hedgehog Slice

Leave out the cocoa powder and switch the dark chocolate to Cadbury Caramilk to make a Caramilk Hedgehog Slice.

Tim Tam Hedgehog Slice

Tim Tams are a delicious flavour for any kind of sweet treat. Slice up one pack of Tim Tams into small pieces and add half to the hedgehog slice and sprinkle the other half over the melted chocolate on top.

Gluten Free Hedgehog Slice

Switch out the biscuits for a gluten free variety. The remaining ingredients in this recipe are naturally gluten free!

Hedgehog Slice without Sweetened Condensed Milk

I like the texture and sweetness that sweetened condensed milk give Hedgehog Slice but it can be made without it. Instead add half a cup of sugar while melting the butter and cocoa powder. Once melted add an egg and whisk together quickly before it starts to cook.

Tips and Tricks

Baking Pan – Using a square baking pan will give a thicker slice, use a rectangle pan for a thinner flatter slice.

Slicing – Let the slice come up to room temperature for 30 minutes before cutting into pieces. This will allow more even and clean slices and stop the chocolate from cracking. Adding oil to the chocolate will also help it slice easier.

Biscuits – Use any type of biscuit or cookie for this recipe. I like superwines but marie biscuits are more traditional.

Additions – Switch out the the almonds for walnuts or add in some dried fruit or chocolate chips.

Hedgehog Slice Ingredients

Superwine Biscuits – Griffins Superwine biscuits are my biscuit of choice but Marie biscuits are also very popular. Any plain biscuit / cookie can be used for this recipe.

Desiccated Coconut – If you’re not a fan of coconut this can be left out of the recipe.

Sliced Almonds – Slice or slivered almonds can be used as well as any other type of nuts like pistachios or walnuts. To make this slice nut free just leave out the nuts.

Butter – No need to get the butter to room temperature for this recipe as it will be melted.

Sweetened Condensed Milk – The recipe only uses half a tin so it can be doubled or check out these recipes to use up the leftover sweetened condensed milk.

Cocoa Powder – Good quality cocoa powder gives the best flavour in your baked goods!

Dark Chocolate – Use a good quality eating chocolate rather than baking chocolate. It’s much better quality and tastes so much better!

Oil – Just a small amount of oil to stop the chocolate from breaking when slicing.

How to Make Hedgehog Slice

Line a 20cm / 8″ Square Baking Pan and set to the side.

Use your hands to crush up the biscuits into small pieces, alternatively add them to a zip lock bag and use a heavy object.

Add the crushed biscuits, desiccated coconut and almonds to a large mixing bowl and set to the side.

Melt the butter, sweetened condensed milk and cocoa powder together in a small saucepan over low heat.

Pour the mixture into the bowl with the dry ingredients and fold together until everything is well incorporated.

Press the hedgehog slice mixture into the baking pan with the back of a spoon or an offset spatula.

Melt the oil and chocolate together in the microwave in 20 second bursts until smooth. Pour over the slice and place into the fridge to set for 2-4 hours.

Remove the slice from the fridge and let it come to room temperature for 30 minutes before slicing. Use a large knife to cut the slice into 16 pieces.

Storage

Place the hedgehog slice into an airtight container and into the fridge for up to 1 week.

It can also be frozen for up to 3 months, just remove the slice from the freezer and let it warm up at room temperature for 10-15 minutes before serving.

The name comes from the jagged edges of the broken biscuits and nuts in the chocolate mix, giving the look of spines on a hedgehog.

How long does Hedgehog Slice last in the fridge?

The slice will last in an airtight container for up to 7 days in the fridge. You can also freeze the slice for up to 3 months.

  • 90g Desiccated Coconut
  • 70g Sliced Almonds
  • 30g Cocoa Powder
  • 110g Butter
  • 1/2 Tin Sweetened Condensed Milk
  • 200g Dark Chocolate
  • 2 tsp Oil
