Rice Bubble Slice Recipe

Rice bubble slice consists of 5 simple ingredients, rice bubbles (also known as rice krispies, rice pops or ricies) , butter, honey, sugar and salt.

The ingredients are melted together, slightly caramelised and folded through the rice bubbles. The slice is set for 30 minutes to create a deliciously chewy, sweet and slightly crunchy slice!

It’s delicious plain and simple but you can also switch it up by covering with chocolate, adding sprinkles, chocolate chips or a chocolate drizzle.

Chocolate Rice Bubble Slice

Instead of using plain rice bubbles in this recipe, switch them out for cocoa pops to make a chocolate rice bubble slice! Follow the rest of the recipe the same and after cutting the slice drizzle or dunk one side into dark chocolate.

Marshmallow Rice Bubble Slice

Rice Bubble slice is the New Zealand version of Rice Krispie Treats which are made with marshmallow. To make this slice with melted marshmallows, remove the sugar and honey, reduce the butter by half and add 180g of marshmallows to the saucepan with the butter. Melt completely and mix into the rice bubbles.

To make this slice without honey simply switch it out for the same amount of golden syrup, maple syrup, agave or corn syrup. Using something other than honey will give the slice a slightly different flavour but will still be delicious!

  • 8 Tbsp / 115g Butter
  • 3 Tbsp Honey – Golden syrup, maple syrup or agave can be substituted here.
  • 1/4 Cup / 50g White Sugar
  • 1/2 tsp Salt
  • 5 Cups / 150g Rice Bubbles – Rice cereal also known as Rice Krispies, Rice Pops or Ricies

How to Make Rice Bubble Slice

In a small saucepan add the butter, honey, sugar and salt.

Heat over medium-high heat, stirring continuously until the butter has melted and the ingredients are well combined.

Bring to the boil and boil for 2-3 minutes until the mixture begins to thicken.

In a large bowl add the rice bubbles. Pour over the melted butter and honey mixture.

Use a wooden spoon to combine the ingredients together. Continue to fold until all of the rice bubbles have been coated, making sure to scrape down the sides and bottom of the bowl.

Spoon all of the rice bubble mixture into a lined 20cm or 8″ square baking pan and press it down into an even layer with the back of a spoon.

Cover and leave at room temperature to set for at least 30 minutes.

Serving and Storage

Remove the set slice from the pan by pulling up on the non stick paper.

Use a sharp knife to cut it into 16 even squares.

Place into an airtight container and store at room temperature for up to 5 days.

How long will the slice keep for?

Store the slice in an airtight container at room temperature for about 5 days. It’s best eaten in the first 2-3 days as it will start to soften over time.

Can Rice Bubble Slice be frozen?

Yes you can freeze the slice if you would like to. Place it into an airtight container and into the freezer for up to 3 months. Let the slice defrost at room temperature for 30 minutes before serving.

Is Rice Bubble Slice Gluten Free?

Yes it is but make sure to check the label on all the ingredients you are using to make 100% sure.

Can you make Rice Bubble Slice without honey?

Honey can easily be switched in the recipe for golden syrup or maple syrup. This will give the slice a slightly different flavour but still just as delicious delicious!
