Chocolate Crackles Recipe

These crispy chocolate treats are a classic in New Zealand and Australia. So nostalgic, they take you right back to childhood along with rice bubble slice, lolly cake and coconut ice.

My recipe for easy Chocolate Crackles are made with real chocolate, giving it the best flavour, and the perfect option to satisfy any sweet tooth! They only take minutes to prepare (great for kids to get involved with as they are no bake) and a few hours in the fridge.

What is a Chocolate Crackle

Chocolate Crackles are a crunchy sweet treat made rice cereal (Rice Bubble, Rice Krispies, Rice Puffs) along with a few other ingredients. These crackles are made without Copha (vegetable shortening), using real chocolate and coconut oil, giving them a much better flavour and texture.

They’re set in the fridge in cupcake cases or they can also be pressed into square pan to make a chocolate crackle slice.

Chocolate Crackles made with Real Chocolate

To make the best tasting recipes you need to use the best quality ingredients! This goes for baking along with cooking.

These Crackles are made with real chocolate (the kind you would eat a block of, not baking chocolate which is usually made with vegetable oil rather than cocoa butter) instead of Copha (vegetable shortening).

Other recipes like to use a mixture of sugar, cocoa powder and the Copha to bind the rice bubbles together. Real chocolate does this job perfectly while providing better texture and flavour.

Chocolate Crackles are a staple at children’s birthday parties here in NZ, but don’t let that fool you into thinking these are just for kids! They make a great party snack but are also super delicious as a sweet treat after dinner!

Chocolate Crackle Variations

White Chocolate Crackles

To make White Chocolate Crackles remove the cocoa powder from this recipe and switch up the dark chocolate for white chocolate. Using white chocolate makes the crackles easier to theme with sprinkles or additional ingredients like cranberries which will stand out against the white colour.

Corn Flake Chocolate Crackles

Switch up the rice bubbles in this recipe with 250g of corn flakes. Also known as corn flake cakes, these are a delicious spin of traditional crackles with rice bubbles.

Chocolate Crackle Slice

Instead of making individual portions of the crackles in cupcake cases try pressing the entire mixture into a square baking pan. Let it set in the fridge and cut into 12 slices to make chocolate crackle slice!

Coco Pops Chocolate Crackles

For even more of a chocolate hit (I don’t think it needs it but if you have coco pops on hand instead of rice bubbles) switch out the rice bubbles for coco pops.

Chocolate Crackles Ingredients

  • 4 Cups / 125g Rice Bubbles – Rice Krispies / Rice Puffs
  • 1/2 Cup / 40g Desiccated Coconut
  • 1/2 Cup / 60g Icing Sugar / Powdered Sugar
  • 2 Tbsp / 15g Cocoa Powder
  • 250g / 9oz Dark Chocolate
  • 40g / 3 Tbsp Coconut Oil

How to Make Chocolate Crackles

In a large mixing bowl add the rice bubbles, desiccated coconut, icing sugar and cocoa powder. Mix together until all of the rice bubbles are evenly coated with the dry ingredients.

In a medium sized bowl melt the chocolate over a pot of simmering water or in the microwave in 20 second bursts, stirring in between. When it has fully melted add the coconut oil and stir until smooth.

Pour the melted chocolate and coconut oil into the bowl with the dry ingredients.

Using a wooden spoon fold the ingredients together. This can take a while to get everything evenly combined, make sure you’re scraping down the sides and bottom of the bowl.

Using a spoon, or an ice cream scoop works great for this, scoop out spoonfuls of the chocolate crackle mixture and place it into cupcake cases. Alternatively you can press the mixture into a slice tin to make a chocolate crackle slice.

Place the chocolate crackles into the fridge for 4-6 hours or overnight to set completely.

Storage

Store the crackles in an airtight container at room temperature for 2 days or in the fridge for 5 days. They will last for about 5 days in the fridge before softening.
