There are so many different versions of rocky road but this one is my favourite! Just 4 ingredients – chocolate, marshmallows, peanuts and Turkish delight – make it incredibly simple but also so delicious!

It’s a perfect dessert, addition to a grazing table, gift idea or just a simple sweet treat. It’ll last in the fridge for about 3 weeks but I don’t know how you would make it last that long without eating it!

What is Rocky Road?

Some places rocky road is an ice cream flavour but I’m talking about the no bake chocolate rocky road slice chocolate bars!

This is one of the most easiest recipes ever! All you need to do is melt the chocolate and throw everything else in the bowl. This makes it perfect for kids to get involved and help out as there’s no need for an oven.

Turkish Delight Rocky Road

This version has Cadbury Turkish Delight in it but this can easily be substituted! If you don’t have it on hand you can use any other type of Turkish Delight, Glace Cherries or gummy lollies/candy.

What goes in Rocky Road?

There are so many different versions of rocky road, all with different ingredients and flavours. There are no rules, you can add just about anything you would like, but here are some suggestions!

  • Freeze Dried Raspberries and Strawberries – For a delicious fruity flavour!
  • Pretzels – That perfect mix of salty and sweet!
  • Shortbread Cookies – Adds a little crunchy texture!
  • Lollies / Candy – The flavour options are endless here!
  • Brownie – Slice up some brownie and add it in, so delicious!
  • Chocolate Bars – Chop up your favourite chocolate bar and add it in!

History

Where did Rocky Road Originate?

Chocolate Rocky Road is though to have originated in Australia around the 1850’s. Like all recipes it really hard to accurately pin point the origins because there was usually many different variations.

Its thought it was created as a way to use up old or spoiled candy that was brought over from Europe.

Today it is very popular in Australia and New Zealand as well as many other places around the world. Ingredients used is usually changed up but the classic here is marshmallows, peanuts and usually Turkish delight.

Why is it called Rocky Road?

The name is thought to have come from the rocky roads used to reach goldfields where the treat was commonly enjoyed.

  • 9 oz / 250g Dark Chocolate – Use a bar of the best quality eating chocolate for the best flavour!
  • 9 oz / 250g Milk chocolate
  • 6 oz / 180g Marshmallows – Mini marshmallows also works really well for this recipe.
  • 1/2 Cup Roasted Unsalted Peanuts – Swap out the peanuts for any other kind of nut.
  • 5 oz / 150g Turkish Delight – Gummy lollies / candy or glace cherries can also be substituted here.

How to Make Rocky Road

Line a 20cm or 8″ square baking pan and set to the side.

Slice the marshmallows and Turkish delight into small pieces.

Break up the dark and milk chocolate into small pieces so it will melt easier and add to a heat proof bowl.

Melt the chocolate in the microwave in 20 second bursts, stirring in between, or over a water bath until smooth.

Add the marshmallows, Turkish delight and peanuts to the chocolate and fold together until well combined.

Transfer the ingredients to the lined baking dish, smoothing out the top, and place into the fridge for at least 4 hours to set.

Remove the set rocky road from the square pan and use a sharp knife to cut into 25 pieces.

How to cut Rocky Road

For nice clean cuts it’s best to cut rocky road at room temperature as the chocolate wont be as hard to cut through as if if it had just been taken out of the fridge. Use a hot sharp knife and slice through, cleaning the knife in between to remove any chocolate.

You can cut it from anywhere between 16-36 pieces depending if you would like them to be bite sized or treat sized.

How long does Rocky Road last?

Rocky Road is best kept in the fridge but you can enjoy it at room temperature. Store it in an airtight container in the fridge for up to 3 weeks or at room temperature for 1-2 weeks.

It can also be frozen, just let it come up to room temperature before eating.

How long does rocky road take to set?

It can take about 2-4 hours to set completely in the fridge. I would recommend giving it at least 4 hours but usually I will leave it for 6 or even overnight.

How to wrap it up?

It can be wrapped in cellophane or paper bags to give as gifts. To store it at home just place it in an airtight container in the fridge.

Why has my chocolate gone seized?

This is caused by either burning the chocolate while melting it or adding something wet into the chocolate. It will harden and turn kind of gummy. If this happens there isn’t really any way of fixing it and you will need to start again.

Can it be frozen?

Yes you can! Place the cut up slices into an airtight container and into the freezer for up to 3 months. Just let it fully defrost at room temperature before enjoying!
