Anything red and green instantly looks festive for the holiday season and these Cranberry and Brie Bites are no different! Filled with sweet cranberry sauce, gooey brie cheese and toasted pecans it’s the ultimate holiday appetizer! The taste of Christmas!
Cranberry Pecan Brie Bites
These look so fancy but you only need 4 ingredients and about 5 minutes of prep time – no need for fussy recipes when you’re short on time, these give maximum impact for such minimal effort.

- Use frozen crescent dough, pizza dough or even pie crust instead of puff pastry for a different texture.
- Change the cranberry sauce to raspberry jam, apricot chutney or any other delicious sauce.
- Makes the bites ahead of time, place the tray into the fridge and bake them just before you’re ready to serve.
- Switch the pecans to walnuts or a combination of different nuts.
Can you Make Cranberry Brie Bites ahead of time?
Yes you can make the bites ahead time, just don’t bake them, and keep the tray in the fridge. About 20-30 minutes before you would like to serve the appetizer place it into the oven straight from the fridge.
This makes it great if you would like to take it with you somewhere else or if you want to enjoy yourself instead of spending all the time in the kitchen preparing food!
Flavour Variations
- Raspberry Brie Puff Pastry Bites – Switch the cranberry sauce or sauce out for raspberry jam. These are so delicious and a little sweeter than the cranberry version.
- Basil Pesto Pastry Bites – Use some store bought basil pesto, cherry tomatoes and brie for an Italian twist!
- Mushroom Pastry Bites – Pan fry mushrooms with garlic and add to the pastry squares with brie. Mushroom lovers with adore these!
- Caprese Pastry Bites – Add sliced tomato to the pastry squares, bake and top with some fresh mozzarella and a drizzle of balsamic.
Cranberry and Brie Pastry Bite Ingredients
- 1 Sheet Frozen Puff Pastry – Look out for butter puff pastry for the best flavour and texture.
- 1/2 Cup Cranberry Sauce – Cranberry sauce can also be used here
- 4oz / 125g Brie Cheese – or camembert
- 1/4 Cup Pecans
- Rosemary to garnish
How to Make Cranberry and Brie Pastry Bites
Preheat the oven to 200C / 400F
Remove the puff pastry sheet from the freezer and let it sit for about 10-15 minutes at room temperature to defrost.
Cut the the pastry into 25 even squares by cutting 5 strips from one side, followed by the other to make a 5×5 grid.
Take each square of pastry and press it into a mini muffin pan.
Cut the brie cheese round into small cubes, measure out the cranberry sauce and the pecans.
Place about 1 tsp of cranberry sauce on to each square of pastry followed by the brie cheese cube and a pecan.
Place the cranberry brie pastry bites into the oven for about 15-20 minutes or until puffed up and golden brown.
Leave to cool for 5 minutes before transferring to a serving plate. Top each with a little fresh rosemary and they are ready to serve!
Storing
Keep any leftover bites in an airtight container in the fridge for up to 4 days. They can also be frozen for up to 3 months. To reheat just place them on a baking sheet and into a 200C / 400F oven for 5-10 minutes until hot.
Do you remove the rind from brie before baking?
No there is no reason to remove the rind, it provides delicious flavour! If you’re baking a whole round of brie you can cut the top off or cut slits so you are easily able to get to the melted cheese.

Yes! If you have some leftover just place them into a airtight container or freezer bag and into the freezer for up to 3 months.
Can you reheat cranberry brie bites?
Yes these can be reheated. To reheat place the bites onto a baking sheet and place into a 200C / 400F oven for about 5 minutes. Increase the amount to 10 if they are frozen.
