Marinated grilled chicken in a creamy spice infused tomato gravy.

  • 4 Chicken Thighs
  • 1 tsp Salt
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Grated Ginger
  • 2 Garlic Cloves
  • 1 tsp Cumin
  • 1 tsp Paprika
  • ½ tsp Chilli Powder
  • ½ tsp Garam Masala
  • ¼ Cup Natural Unsweetened Yoghurt
  • 1 Tbsp Oil
  • 1 Small Onion
  • 1 Tbsp Grated Ginger
  • 2 Garlic Cloves
  • 3 tsp Ground Coriander
  • 2 tsp Paprika
  • ½ tsp Turmeric
  • ½ tsp Chilli Powder
  • 3 Medium Tomatoes
  • ½ tsp Salt
  • 1¼ Cups Water
  • ¼ Cup Cream
  • Coriander Leaves to serve
  1. Cut the chicken thighs into 1 inch or 2cm cubes and place in a medium sized bowl. Add the salt, lemon juice, yoghurt, garlic, ginger and spices and mix to combine. Cover and place in the fridge to marinate for at least 30 minutes but ideally overnight.
  2. Heat a heavy based pan over medium high heat and add half of the oil. Add the chicken, cooking for 3-4 minutes before turning to cook on the other side. Place in a bowl and set to the side.
  3. To make the sauce dice the onion, tomatoes, and measure out the spices. Add the remaining oil to the pan and cook the onion over medium heat for 4-5 minutes until browned. Grate in the ginger and garlic and pour over the spices. Cook for 30 seconds until fragrant before adding the tomatoes and cooking for another few minutes. Season with the salt and pour in the water. Turn the heat to low, cover and simmer for 30 minutes.
  4. For a smooth sauce use a stick blender or food processor. Pour in the cream, sprinkle in the garam masala and mix to combine. Add the chicken and stir to combine. Serve with rice, naan, and a side of yoghurt.
