Thai Beef Salad Recipe

This is one of my favourite salads to make. It’s quick, easy, healthy and delicious; perfect for a midweek meal.

- Steak (or any other meat) - Egg Noodles - Carrot - Cucumber

Ingredients

Trim excess fat from the steak and coat with oil and salt & pepper. Place the steak in an extremely hot griddle pan for about 2-3 minutes on each side.

Remove steak from the pan and leave to rest on a chopping board while you prepare the remaining ingredients.

Bring water to the boil in a pot and cook the egg noodles according to package instructions.

On a clean chopping board cut up your vegetables and herbs. To make the salad more interesting try and cut the vegetables in different ways such as using a vegetable peeler.
