Passionfruit Slice
One of the best parts of summer every year is passionfruit coming into season. They’re delicious to eat straight from the fruit with a spoon, mix with sparkling water for a refreshing drink or to bake with!
This no bake passionfruit slice is one of my favourite passionfruit recipes but I also wont ever go past a passionfruit cheesecake! It’s no bake so is super simple and easy to make, just mix all of the ingredients together and set in the fridge.
Easy Passionfruit Slice
The slice is made from a delicious no bake base of crushed biscuits (I’ve used super wine but scotch fingers or your favourite type will work great!), desiccated coconut, lemon zest, butter and sweetened condensed milk.
This recipe only uses half a can of sweetened condensed milk so check out some other recipes to use up the other half.
The topping is made from icing sugar (powdered sugar), butter, lemon zest and juice and passionfruit. Fresh passionfruit is the best to use when they are in season but other times of the year you can also use passionfruit pulp from a can.

No Bake Slice
If you’re looking for a perfect sweet treat to go along with that afternoon tea or coffee (I recommend making these fluffy cheese scones too) , this passionfruit slice is it! It’s just as popular with adults as it is with kids. You can make it ahead of time and it’s travels so well so it’s great to bring with you when you need to ‘bring a plate’.
Leftover Sweetened Condensed Milk Recipes
This recipe uses half a can of sweetened condensed milk. You can either double the recipe to use the whole can, use it in another recipe or freeze it for later use. Here are a few recipes that also use half a can.
No Bake Passionfruit Slice Ingredients
Lemon Base
- 9oz / 250g Super Wine Biscuits – Any other plain biscuit or cookie can be substituted here. Krispy, scotch fingers and Marie are all perfect for this recipe.
- 1 Cup / 80g Desiccated Coconut
- 8 Tbsp / 115g Butter – Salted or unsalted can be used.
- 1/2 Can / 200g Sweetened Condensed Milk
- 1 Tbsp Lemon Zest
Passionfruit Topping
- 2 1/2 Cups / 310g Icing Sugar / Powdered Sugar
- 2 Tbsp / 30g Butter
- 2 tsp Lemon Zest
- 1 Tbsp Lemon Juice
- 3 Passionfruit – Pulp
How to Make No Bake Passionfruit Slice
Base
Line and grease an 8″ / 20cm square baking pan.
Crush the biscuits using a food processor or place them into a bag and use a heavy object like a rolling pin.
Place the crushed biscuits and coconut in a medium sized bowl.
Melt the butter and add to the biscuits and coconut along with the lemon zest and sweetened condensed milk.
Mix the slice base together until well combined and pour out into the pan.
Use the back of a spoon to press the base into an even layer and place into the fridge to set while making the passionfruit topping.
Passionfruit Topping
To make the passionfruit topping in a small bowl add the icing sugar / powdered sugar.
Melt the butter and add to the sugar along with the remaining topping ingredients.
Use a spoon to stir the ingredients together until you have a smooth thick mixture.
Spread the passionfruit topping over the no bake base using an offset spatula. If the topping is hard to spread or it keeps sticking to the spatula, dip it first in hot water.
Place the passionfruit slice into the fridge to set for at least 4 hours or overnight.
Slicing and Serving
Remove the slice from the pan by pulling up the edges of the baking paper.
Use a long sharp knife to cut it into 12 or 16 slices, cleaning the knife in between each slice.
Place in an airtight container and into the fridge for up to 7 days.The slice can be served cold from the fridge or at room temperature depending if you prefer a soft or chewier slice.
FAQ
Can you freeze Passionfruit Slice?
Yes this slice freezes perfectly! Place it into an airtight container and into the freezer for up to 3 months. When you want to eat the slice remove a piece from the freezer and let it defrost for 15-20 mins at room temperature.
Can canned passionfruit pulp be used?
Yes! I always have a can of passionfruit pulp in the pantry for making baked goods and adding to drinks. If passionfruit isn’t season you can use 1 Tbsp of canned passionfruit pulp for every fresh passionfruit needed. This recipe would need 3 Tbsp of passionfruit pulp.
What is passionfruit?
Passionfruit is a tropical tasting fruit which grows in many countries including NZ and Australia. It grows on a vine and the pulp of the fruit is eaten.
Can Passionfruit be substituted?
This recipe is very similar to my No Bake Lemon Slice. If you don’t have passionfruit I would recommend following that recipe!
